Ingredients
3/4 lb ground beef (80/20 blend)
1 large yellow onion, thinly sliced
1/2 tsp salt
1/2 tsp black pepper
4 slices American cheese
1 tbsp butter or oil
2 brioche buns
1/4 cup shredded lettuce (optional)
2 tbsp mayonnaise (optional)
4 pickle slices (optional)
Instructions
1. Slice the yellow onion very thin using a sharp knife or mandoline.
2. Divide the ground beef into two loose balls, around 6 oz each.
3. Heat a cast iron skillet over medium-high heat and add a bit of butter or oil.
4. Place a beef ball on the hot skillet, top with a pile of onions, and smash it flat.
5. Season the patty with salt and pepper immediately.
6. Let cook for 2–3 minutes until the bottom is browned and crispy.
7. Flip the patty so onions are underneath and top the meat with cheese.
8. Continue cooking 1–2 more minutes until the onions are crisp and the cheese is melted.
9. Toast the brioche buns until golden.
10. Assemble: spread mayo on the bottom bun, add lettuce, the patty, pickles, then top bun.
