Ingredients
3 cups sweetened shredded coconut
1 cup thick caramel sauce
1 cup semi-sweet or dark chocolate chips
1 teaspoon vanilla extract
Sea salt flakes, optional
Instructions
1. Toast the shredded coconut in a skillet or oven at 350°F for 5–7 minutes until golden, stirring occasionally. (Optional but recommended)
2. In a large bowl, mix the (toasted) coconut with caramel sauce and vanilla until fully coated.
3. Scoop tablespoon-sized mounds of the mixture onto a parchment-lined tray and shape into discs.
4. Melt chocolate chips and dip the bottom of each cookie, placing them back on the tray.
5. Drizzle remaining chocolate over the tops using a spoon or piping bag.
6. Optionally sprinkle with sea salt flakes, then chill for at least 30 minutes until set.
Notes
Use a thick caramel sauce or reduce a thinner one to help the cookies hold together better.
Toasting the coconut adds a richer, nuttier flavor and prevents excess moisture.
For even cookies, use a small cookie scoop to shape them.
