60 mini pretzels

30 soft caramels

1 tablespoon heavy cream or milk

1 1/2 cups semi-sweet or milk chocolate chips

1 teaspoon coconut oil or butter (optional)

Instructions

1. Lay half the pretzels flat on a parchment-lined tray. Slightly soften the caramels by microwaving them with cream in 10-second intervals until malleable, about 30 seconds total.

2. Spoon or pipe caramel onto each pretzel, then top with a second pretzel to form a sandwich. Gently press to secure.

3. Chill the sandwiches in the fridge for 10–15 minutes to firm up the caramel.

4. Melt the chocolate chips and coconut oil (if using) in 20-second microwave bursts or a double boiler, stirring until smooth.

5. Dip each chilled sandwich into the melted chocolate using a fork. Let excess drip off and return to parchment.
