Ingredients
- 1 9-inch pie crust (store-bought or homemade), blind baked
- 6 slices cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 3 large eggs
- 1/2 cup whole milk
- 1/3 cup green peas (frozen or fresh)
- 1/3 cup corn kernels
- 1/3 cup diced bell peppers (yellow or red)
- 1/4 tsp salt
- 1/4 tsp black pepper
- Optional: dash of hot sauce or pinch of red pepper flakes
Instructions
- Preheat oven to 375°F (190°C). Blind bake your pie crust for 8 minutes, then set aside to cool.
- Cook bacon until crispy, then crumble and set aside.
- In a large bowl, beat the softened cream cheese until smooth.
- Add sour cream, eggs, milk, salt, pepper, and optional hot sauce. Whisk until smooth.
- Fold in shredded cheese, bacon, peas, corn, and diced bell peppers.
