Ingredients

1 cup unsalted butter melted

1 1/2 cups granulated sugar

1 cup brown sugar packed

4 large eggs

1 tablespoon vanilla extract

1 cup unsweetened cocoa powder

1 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 cup unsalted butter softened

2 cups powdered sugar

12 tablespoons heavy cream

1 teaspoon peppermint extract

few drops green food coloring optional

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

1 tablespoon butter optional


Instructions

1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.

2. Mix melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, then vanilla.

3. In another bowl, combine cocoa powder, flour, salt, and baking powder. Fold into wet ingredients.

4. Pour batter into pan and bake for 25–30 minutes. Cool completely.

5. Beat butter for mint layer, add powdered sugar, cream, and peppermint extract until smooth. Add food coloring if desired.

6. Spread mint layer evenly over cooled brownies and chill for 20–30 minutes.

7. Heat cream until warm, pour over chocolate chips, stir until smooth. Add butter if using.

8. Pour ganache over mint layer and spread evenly.

9. Chill for 1–2 hours until set. Slice and serve.

Notes

Use high-quality chocolate and cocoa powder for the richest flavor.
