Ingredients

400 g potato gnocchi

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 cup heavy cream

1/2 cup grated parmesan cheese

1/4 teaspoon chili flakes

Salt and pepper to taste

1 tablespoon chopped fresh parsley


Instructions

1. Heat olive oil and butter in a large nonstick skillet over medium-high heat. Add gnocchi in a single layer and sear undisturbed for 2–3 minutes until golden brown. Flip and sear the other side. Cook in batches if needed.

2. Lower heat to medium. Add a little more butter if needed, then sauté garlic and rosemary until fragrant — about 1 minute.

3. Pour in heavy cream and bring to a gentle simmer. Let it reduce slightly, stirring often, for about 3–5 minutes.

4. Add grated parmesan and stir until melted and smooth.

5. Return seared gnocchi to the pan. Toss gently to coat in sauce and let them simmer together for 2 more minutes.

6. Season with salt, pepper, and chili flakes.

7. Garnish with fresh parsley and extra parmesan if desired. Serve immediately.

Notes

For extra crispiness, let the gnocchi sit untouched while searing — resist the urge to stir too soon.

Simmer the sauce gently; boiling can cause it to separate.

Add cooked pancetta or sautéed mushrooms for extra flavor depth.
