Ingredients

2 cups corn kernels

2 tablespoons mayonnaise

2 tablespoons sour cream or Mexican crema

1/2 cup cotija cheese

1 tablespoon fresh lime juice

1 teaspoon chili powder

1 clove garlic, minced

1 tablespoon butter

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste


Instructions

1. Grill or sauté the corn until lightly charred.

2. In a bowl, mix mayonnaise, sour cream, lime juice, garlic, salt, and pepper.

3. Add warm corn to the creamy mixture and stir until coated.

4. Fold in most of the cotija cheese and sprinkle in the chili powder.

5. Garnish with remaining cheese, cilantro, and lime juice.

6. Serve warm or chilled.

Notes

Use fresh corn if possible for best flavor.

Adjust chili powder to control heat level.
