Mediterranean Ground Beef and Veggie Stir Fry is a colorful, hearty dish that blends lean ground beef with fresh vegetables like zucchini, bell peppers, and red onion, all infused with Mediterranean spices and a splash of balsamic vinegar. This one-pan meal is quick, wholesome, and deeply satisfying, perfect for weeknights or meal prep.
Ingredients
- 1 lb (450g) ground beef
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp balsamic vinegar
- Chopped fresh parsley (for garnish)
Optional:
- Cherry tomatoes
- Crumbled feta
- Kalamata olives
- Crushed red pepper flakes
Instructions
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Add ground beef, break it apart, and cook until browned. Season with salt and pepper. Remove from skillet and set aside.
- Add remaining olive oil, garlic, and onions to the skillet. Sauté for 2 minutes.
- Add bell peppers and stir-fry for 4–5 minutes until slightly tender.
- Add zucchini, oregano, thyme, paprika, and more salt and pepper. Cook for another 3–4 minutes.
- Return the beef to the pan, stir in balsamic vinegar, and simmer for 1–2 minutes.
- Garnish with parsley and serve hot.
