Description

Mediterranean Ground Beef and Veggie Stir Fry is a colorful, hearty dish that blends lean ground beef with fresh vegetables like zucchini, bell peppers, and red onion, all infused with Mediterranean spices and a splash of balsamic vinegar. This one-pan meal is quick, wholesome, and deeply satisfying, perfect for weeknights or meal prep.


Ingredients

  • 1 lb (450g) ground beef
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • Chopped fresh parsley (for garnish)

Optional:

  • Cherry tomatoes
  • Crumbled feta
  • Kalamata olives
  • Crushed red pepper flakes

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add ground beef, break it apart, and cook until browned. Season with salt and pepper. Remove from skillet and set aside.
  2. Add remaining olive oil, garlic, and onions to the skillet. Sauté for 2 minutes.
  3. Add bell peppers and stir-fry for 4–5 minutes until slightly tender.
  4. Add zucchini, oregano, thyme, paprika, and more salt and pepper. Cook for another 3–4 minutes.
  5. Return the beef to the pan, stir in balsamic vinegar, and simmer for 1–2 minutes.
  6. Garnish with parsley and serve hot.
