Ingredients

4 slices sourdough or artisan bread

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, finely chopped

68 leaves fresh basil, torn

2 tablespoons black olives, sliced

1 clove garlic, minced (optional)

2 tablespoons butter, softened (or olive oil)

Optional: 1 tablespoon pesto, crushed red pepper, or baby spinach leaves


Instructions

1. Lay out bread slices and butter one side of each slice.

2. On the unbuttered side, layer shredded mozzarella and crumbled feta.

3. Add sun-dried tomatoes, olives, basil, and optional garlic or pesto.

4. Top with remaining bread slices, buttered side facing out.

5. Heat a skillet over medium-low and place sandwiches in the pan.

6. Cook 3–4 minutes per side, pressing lightly with a spatula.

7. Remove from skillet and let rest 1 minute.
