Ingredients

  • 1 lb ground beef
  • 1 (16 oz) can refried beans
  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup Monterey Jack cheese, shredded
  • Optional toppings:
  • Diced tomatoes or pico de gallo
  • Sour cream
  • Sliced green onions
  • Jalapeños
  • Chopped cilantro
  • Tortilla chips for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
  3. Stir in taco seasoning and ¼ cup water; simmer for 2–3 minutes.
  4. In a mixing bowl, combine cream cheese, sour cream, and refried beans. Stir until smooth.
  5. Add Rotel tomatoes and seasoned beef to the bean mixture. Mix well.
  6. Spread mixture evenly into a 9×13 baking dish.
  7. Top with shredded cheddar and Monterey Jack cheese.
  8. Bake for 20–25 minutes until bubbly and golden around edges.
