Ingredients

1 medium green cabbage

2 tablespoons olive oil

4 cloves garlic, minced

2 shallots, finely chopped

2 tablespoons tomato paste

1 cup heavy cream

1/2 cup vegetable or chicken broth

1/2 cup freshly grated parmesan cheese

1/2 teaspoon red pepper flakes

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Cut cabbage into thick wedges, about 1.5 to 2 inches wide, leaving the core intact.

2. Heat olive oil in a large skillet over medium-high heat. Sear each cabbage wedge on both cut sides until golden brown. Set aside.

3. In the same skillet, add garlic and shallots. Cook until soft and fragrant.

4. Add tomato paste and cook for 1–2 minutes. Then stir in the cream and broth. Simmer until slightly thickened. Season with salt, pepper, and red pepper flakes.

5. Pour some sauce into a baking dish. Place seared cabbage wedges on top. Spoon remaining sauce over the cabbage.

6. Cover with foil and bake at 375°F (190°C) for 35–40 minutes until cabbage is tender.

7. Uncover, sprinkle with parmesan cheese, and broil for 3–5 minutes until golden and bubbly.

8. Garnish with parsley and serve warm.

Notes

Sear the cabbage well for maximum flavor before baking.

Freshly grated parmesan melts better and adds a nutty depth.

Let the sauce simmer until slightly thickened to concentrate its flavor.
