Ingredients

1 tablespoon olive oil

3 cloves garlic, minced

1 shallot, finely chopped

1/4 teaspoon red pepper flakes

1/2 cup sun-dried tomatoes, thinly sliced

1 cup heavy cream

1/2 cup chicken or vegetable broth

1/2 cup freshly grated Parmesan cheese

1 pound shelf-stable or refrigerated gnocchi

2 cups fresh baby spinach

Salt and freshly ground black pepper to taste

Fresh chopped parsley or chives for garnish


Instructions

1. Heat olive oil in a large skillet over medium heat. Add minced garlic and shallots, and cook for 1–2 minutes until fragrant. Stir in red pepper flakes and sliced sun-dried tomatoes. Let them sizzle slightly to enhance their flavor.

2. Pour in the heavy cream and broth, stirring well to combine. Let the sauce come to a gentle simmer while scraping the bottom of the pan for flavor bits.

3. Add the grated Parmesan cheese and stir until fully melted into the sauce.

4. Stir in the uncooked gnocchi. Simmer uncovered for 5–7 minutes, stirring occasionally, until gnocchi is tender and the sauce thickens.

5. Fold in the baby spinach and cook for 1–2 minutes until wilted. Season with salt and pepper to taste.

6. Remove from heat and garnish with more parmesan and chopped herbs. Serve immediately.

Notes

Let the sauce simmer gently so it thickens without breaking.

Use freshly grated Parmesan — it melts better and delivers better flavor.

Frozen gnocchi can be used without thawing; just add a few extra minutes to cook time.
