Description

A refreshing and vibrant no-cook salad made with sliced cucumbers, cherry tomatoes, and red onions, all tossed in a tangy red wine vinegar and olive oil marinade. Fresh dill adds a fragrant herbal note, making this dish perfect for summer meals or make-ahead sides.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon sugar (optional)

Instructions

  1. Slice cucumbers into thin rounds. Halve the cherry tomatoes. Thinly slice the red onion into half-moons.
  2. In a small bowl, whisk together red wine vinegar, olive oil, salt, pepper, and sugar (if using).
  3. In a large mixing bowl, combine cucumbers, tomatoes, onions, and fresh dill.
  4. Pour the marinade over the vegetables and toss gently to coat everything evenly.
  5. Cover and refrigerate for at least 1 hour (2–3 hours for best flavor), stirring once during marination.
  6. Before serving, taste and adjust seasoning if needed. Serve chilled.
