Ingredients

2 large sweet potatoes, scrubbed and sliced into 1/2-inch rounds

2 tablespoons olive oil (or melted butter)

3 tablespoons pure maple syrup

1/2 teaspoon sea salt

1/4 teaspoon ground cinnamon (optional)

1216 large marshmallows (or mini marshmallows)

1216 whole pecan halves

Cooking spray or parchment paper


Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

2. Slice sweet potatoes into 1/2-inch thick rounds.

3. In a bowl, toss sweet potato slices with olive oil, maple syrup, sea salt, and cinnamon.

4. Arrange slices in a single layer on the prepared sheet.

5. Roast for 20 minutes, flip, then roast another 10–15 minutes until golden and tender.

6. Remove tray and place a marshmallow on each sweet potato round.

7. Broil for 1–2 minutes until marshmallows are golden and puffed—watch closely!

8. Press a pecan half on top of each toasted marshmallow immediately after broiling.

9. Let cool for 2–3 minutes before serving.

10. Optional: drizzle with maple syrup or sprinkle with cinnamon or flaky salt before serving.
