Ingredients
- 8 oz high-quality white chocolate, chopped
- 1/4 cup heavy cream
- 1 tbsp unsalted butter
- 1 tbsp fresh lemon zest (about 1 large lemon)
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar, for rolling
Instructions
- Finely chop the white chocolate and place it in a heatproof bowl.
- Melt the chocolate slowly using a double boiler or in the microwave in 20-second intervals, stirring each time.
- In a small saucepan, heat the heavy cream and butter over low heat until just steaming.
- Pour the warm cream mixture over the melted white chocolate and stir until smooth.
- Stir in the lemon zest, lemon juice, and vanilla extract until fully combined.
- Cover and refrigerate the mixture for 2 hours or until firm enough to scoop.
- Once firm, scoop and roll into small balls with your hands.
- Roll each truffle in powdered sugar until fully coated.
- Store in the refrigerator until ready to serve. Re-roll in sugar before serving if needed.
