Ingredients
1 lb chicken breast
2 tsp lemon pepper seasoning
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
8 oz rotini pasta
1 tbsp butter
3 cloves garlic, minced
1 ½ tsp Cajun seasoning
½ cup roasted red peppers, chopped
1 cup heavy cream
¾ cup grated Parmesan cheese
¼ cup reserved pasta water
Fresh basil for garnish (optional)
Instructions
1. Dice chicken into bite-sized pieces, pat dry, and season with lemon pepper, salt, and olive oil.
2. Heat a skillet over medium-high and sear the chicken 2–3 minutes per side until golden and cooked through. Remove and set aside.
3. Bring a pot of salted water to a boil. Cook rotini pasta until al dente. Reserve ½ cup of pasta water and drain the rest.
4. In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 1 minute. Stir in Cajun seasoning and roasted red peppers. Cook for 2–3 minutes.
5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
6. Add the pasta and reserved water to the sauce. Toss gently and let it simmer 1–2 minutes to absorb flavor.
7. Plate the pasta, top with chicken bites, garnish with fresh basil, and serve hot.
