Ingredients

For the Chicken Bites:

  • 2 large boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 teaspoon red pepper flakes (optional)
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh parsley (for garnish)

For the Parmesan Linguine:

  • 8 ounces linguine
  • 2 tablespoons unsalted butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ½ cup reserved pasta water (as needed)

Optional Garnish:

  • Extra grated Parmesan
  • Lemon wedges for serving
  • Additional chopped parsley

Instructions

Step 1: Cook the Linguine

  1. Bring a large pot of salted water to a boil.
  2. Add the linguine and cook according to package instructions until al dente.
  3. Reserve ½ cup of pasta water, then drain and set the pasta aside.

Step 2: Prepare the Chicken Bites

  1. Pat the chicken dry and season with salt, black pepper, smoked paprika, and garlic powder.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. Add the chicken in a single layer and sear for 3-4 minutes per side until golden brown and fully cooked.
  4. Remove the chicken from the pan and set aside.

Step 3: Make the Lemon Garlic Butter Sauce

  1. In the same skillet, lower the heat to medium and add 2 tablespoons of butter.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add red pepper flakes (if using) and squeeze in the lemon juice.
  4. Return the chicken to the pan, tossing it in the sauce for 1-2 minutes.

Step 4: Prepare the Parmesan Linguine

  1. In a separate pan, melt 2 tablespoons of butter over medium heat.
  2. Add minced garlic and sauté for 30 seconds.
  3. Pour in the heavy cream and let it simmer for 2 minutes, stirring frequently.
  4. Stir in the grated Parmesan cheese, allowing it to melt smoothly.
  5. Season with salt and black pepper to taste.
  6. Toss the drained linguine in the sauce, adding reserved pasta water as needed.

Step 5: Assemble and Serve

  1. Plate the Parmesan linguine and top with the lemon garlic butter chicken bites.
  2. Garnish with chopped parsley and extra Parmesan.
  3. Serve with lemon wedges on the side. Enjoy!
