Ingredients
2 cups all-purpose flour
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 cup light corn syrup
1 cup brown sugar, packed
4 large eggs
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups pecan halves
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
2. In a medium bowl, mix flour, powdered sugar, and softened butter until crumbly. Press into the prepared pan.
3. Bake crust for 18–20 minutes until the edges are lightly golden.
4. While the crust bakes, whisk together corn syrup, brown sugar, eggs, vanilla, and salt in a bowl.
5. Stir in pecan halves until evenly coated.
6. Pour the filling over the hot crust. Spread evenly if needed.
7. Return to oven and bake for 30–35 minutes, or until filling is set with a slight jiggle.
8. Let cool completely in the pan for at least 2 hours or chill in the fridge.
9. Lift out using parchment and cut into squares or bars.
Notes
Let the bars cool completely before cutting to get clean, sharp slices.
You can toast the pecans beforehand for extra depth of flavor.
These bars taste even better the next day once they’ve set fully.
