Ingredients

  • 1 (14 oz) kielbasa sausage, sliced into ½-inch rounds
  • 1.5 lbs baby potatoes, halved or quartered
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil.
  2. In a large bowl, combine sliced potatoes and onions with olive oil, garlic, paprika, salt, and pepper. Toss until evenly coated.
  3. Add the kielbasa slices and gently toss again.
  4. Spread everything onto the sheet pan in a single layer. Place potatoes cut-side down for maximum crispness.
  5. Roast for 35–40 minutes, tossing halfway through, until potatoes are golden and fork-tender, and kielbasa is browned on the edges.
