Ingredients
1 ½ pounds russet potatoes, peeled and diced into 1-inch cubes
14 oz smoked kielbasa sausage, sliced into ¼-inch rounds
1 medium yellow onion, diced
2 cloves garlic, minced
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
½ cup heavy cream
2 cups shredded sharp cheddar cheese
½ teaspoon paprika
½ teaspoon black pepper
Salt to taste
1 teaspoon dried parsley (or fresh for garnish)
Nonstick spray or butter for greasing the casserole dish
Instructions
1. Peel and cube the potatoes into 1-inch pieces for even cooking. Slice the kielbasa and prep the aromatics.
2. In a large skillet, brown the kielbasa over medium heat for 5-6 minutes until slightly crispy. Remove and set aside.
3. In the same skillet, melt butter and sauté the diced onion until translucent, about 4 minutes. Add garlic and cook for 30 seconds.
4. Stir in the flour to create a roux. Slowly whisk in milk and heavy cream until smooth and thickened.
5. Season the sauce with paprika, pepper, and salt. Stir in shredded cheddar cheese and melt fully into a creamy sauce.
6. Combine the cheese sauce, browned kielbasa, and potatoes in a large bowl. Mix gently to coat everything.
7. Grease a 9×13 inch casserole dish and pour in the mixture. Top with extra shredded cheese if desired.
8. Cover with foil and bake at 375°F (190°C) for 40 minutes. Uncover and bake for 15-20 more minutes until golden and bubbly.
9. Let rest for 5-10 minutes before serving. Garnish with parsley.
Notes
Use sharp cheddar for a strong cheesy flavor or blend with mozzarella for extra gooeyness.
Browning the kielbasa before baking adds rich depth and texture.
Letting the casserole rest after baking helps it set for easier slicing and better flavor distribution.
