8 lamb rib chops

1 tablespoon olive oil

1 teaspoon kosher salt

0.5 teaspoon freshly ground black pepper

0.5 teaspoon smoked paprika

0.25 teaspoon crushed red pepper flakes

3 tablespoons unsalted butter

4 garlic cloves, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme leaves

0.5 lemon, zested

1 teaspoon lemon juice


Instructions

1. Remove lamb chops from the fridge and let them sit at room temperature for 20–30 minutes.

2. Pat the lamb dry, then rub with olive oil, salt, pepper, paprika, and red pepper flakes.

3. Heat a cast iron skillet over medium-high heat until very hot.

4. Sear lamb chops for 3–4 minutes per side without crowding the pan.

5. Optional: Sear the fat cap briefly by holding chops upright for 30 seconds.

6. Reduce heat to medium and push lamb to one side of the pan.

7. Add butter, garlic, rosemary, thyme, lemon zest, and lemon juice to the other side.

8. Stir butter mixture for 30 seconds until garlic is fragrant.

9. Tilt the pan and baste the lamb chops with the melted garlic butter for 1–2 minutes.

10. Check internal temp: 130–135°F for medium-rare.

11. Transfer chops to a plate, tent with foil, and rest for 5–7 minutes.

12. Serve with remaining garlic butter, lemon wedges, and optional fresh herbs.
