Ingredients

  • 1.5 to 2 lb pork tenderloin

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon Dijon mustard

  • 2 tablespoons brown sugar or honey

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground black pepper

  • 1 teaspoon salt

  • Fresh rosemary or thyme sprigs (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Trim silver skin and pat pork dry with paper towels. Let it rest at room temp for 15–20 minutes.

  3. In a bowl, whisk together olive oil, garlic, soy sauce, Dijon mustard, brown sugar (or honey), balsamic vinegar, paprika, salt, and pepper.

  4. Heat a cast iron skillet over medium-high heat. Sear pork on all sides until golden brown (about 2 minutes per side).

  5. Brush pork generously with marinade and transfer skillet to the oven. Roast for 18–22 minutes, until internal temp reaches 145°F (63°C).

  6. Remove pork from oven, tent with foil, and let rest for 5–10 minutes.

  7. Slice into medallions and drizzle with remaining juices or reserved glaze.

  8. Garnish with fresh rosemary or thyme if desired. Serve warm.
