Ingredients
1 sheet puff pastry, thawed
1 egg, beaten
1/2 cup Italian lemon spread or lemon curd
2 tablespoons powdered sugar
1 teaspoon lemon zest (optional)
Fresh mint leaves, for garnish (optional)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Roll out the puff pastry on a lightly floured surface and cut into rounds using a cookie cutter or glass.
3. Place rounds on the prepared baking sheet and prick the centers with a fork.
4. Brush the tops with the beaten egg to create a golden finish.
5. Bake for 15–18 minutes until golden brown and puffed.
6. Remove from oven and let cool completely on a wire rack.
7. Gently press the center of each puff to flatten slightly.
8. Spoon or pipe lemon spread onto each pastry round.
9. Dust with powdered sugar, sprinkle lemon zest if using, and garnish with fresh mint.
10. Serve immediately for the best texture.
