Ingredients

2 boneless skinless chicken breasts

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic minced

½ cup sun-dried tomatoes chopped

1 cup chicken broth

1 cup heavy cream

¾ cup parmesan cheese grated

1 teaspoon Italian seasoning

8 ounces spaghetti

2 tablespoons fresh parsley chopped


Instructions

1. Pat chicken dry and season both sides with salt and pepper.

2. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.

3. Lower the heat to medium and sauté garlic for 30 seconds until fragrant. Add sun-dried tomatoes and cook for another minute.

4. Pour in chicken broth, scraping up brown bits from the pan. Simmer for 2 minutes.

5. Stir in heavy cream, parmesan, and Italian seasoning. Simmer until slightly thickened.

6. Meanwhile, cook spaghetti in salted water until al dente. Reserve ½ cup pasta water and drain the rest.

7. Add pasta to the skillet and toss to coat in the sauce. Add reserved pasta water as needed to loosen the sauce.

8. Slice chicken and place it on top of the pasta. Let it warm through for 1–2 minutes.

9. Garnish with parsley and extra parmesan if desired. Serve hot.
