Ingredients

1.5 pounds sirloin steak, cut into 1 to inch cubes

1.5 pounds baby gold potatoes, halved or quartered if large

4 cloves garlic, minced

4 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional)

1/4 teaspoon crushed red pepper flakes (optional)


Instructions

1. Cut the steak into bite-sized cubes and pat them dry thoroughly with paper towels.

2. Wash and halve the baby potatoes. Mince the garlic and chop parsley, if using.

3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes, cut side down. Season with salt and pepper.

4. Cover the skillet and cook for 10–12 minutes, stirring occasionally, until potatoes are tender and golden. Remove and set aside.

5. Increase heat to medium-high, add the remaining olive oil, and sear steak cubes in batches. Cook 2 minutes per side without overcrowding the pan. Remove steak once browned.

6. Reduce heat to medium and add butter and minced garlic to the skillet. Stir continuously for 1–2 minutes until garlic is fragrant.

7. Return steak bites and potatoes to the pan. Toss everything in the garlic butter for 1–2 minutes to heat through and coat evenly.

8. Garnish with fresh parsley and crushed red pepper flakes if using. Serve hot.

Notes

For best sear, make sure steak is completely dry before hitting the skillet.

A cast-iron skillet gives the best caramelization for both steak and potatoes.
