Ingredients

2 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

0.5 teaspoon salt

1 teaspoon sugar

1 tablespoon balsamic vinegar

2 pounds ground beef

0.5 cup caramelized onions

0.75 cup breadcrumbs

2 teaspoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

0.5 teaspoon dried thyme

0.25 cup milk

2 large eggs

Salt and freshly ground black pepper, to taste

0.5 cup shredded Gruyère or Swiss cheese

Remaining caramelized onions

0.75 to 1 cup shredded Gruyère or Swiss cheese

Fresh parsley, chopped (optional)


Instructions

1. Heat a skillet over medium-low, add butter and olive oil, then stir in sliced onions and salt. Cook slowly for 30–40 minutes, stirring occasionally, until onions are deep golden and soft. Add sugar to help caramelize, and finish with balsamic vinegar. Set aside.

2. In a large bowl, mix ground beef, 0.5 cup caramelized onions, breadcrumbs, Worcestershire sauce, garlic powder, onion powder, thyme, milk, eggs, shredded cheese, salt, and pepper until just combined.

3. Preheat oven to 375°F (190°C). Lightly grease or line a loaf pan. Press the meat mixture evenly into the pan.

4. Bake for 40–45 minutes until the internal temperature reaches 160°F (71°C).

5. Remove from oven, top with remaining caramelized onions and cheese.

6. Broil for 2–3 minutes until cheese is bubbly and golden.

7. Rest for 10–15 minutes before slicing. Garnish with fresh parsley and serve warm.

Notes

Always caramelize the onions low and slow to avoid bitterness.

Don’t overmix the meat to keep the loaf tender.
