Ingredients

1 ½ pounds ground beef

1 small yellow onion, finely diced

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 ½ teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon dried oregano

2 tablespoons tomato paste

¼ cup beef broth

8 medium flour tortillas

2 cups green enchilada sauce

2 ½ cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

½ cup diced red onion

1 fresh jalapeño, sliced

¼ cup chopped fresh cilantro

½ cup corn kernels

½ cup sour cream


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Cook ground beef in a skillet over medium heat for 5–7 minutes until browned.

3. Add onion and cook until softened, then stir in garlic.

4. Drain excess grease and mix in salt, pepper, cumin, chili powder, smoked paprika, oregano, and tomato paste.

5. Add beef broth and simmer until slightly thickened.

6. Spread green enchilada sauce on the bottom of the baking dish.

7. Warm tortillas to prevent cracking.

8. Fill each tortilla with beef mixture and cheese, roll tightly, and place seam-side down in dish.

9. Pour remaining sauce over enchiladas and top with remaining cheese.

10. Bake covered for 15 minutes, then uncovered for 10–15 minutes until bubbly.

11. Rest 5–10 minutes before garnishing and serving.
