1 cup granulated sugar

1/2 cup Bisquick baking mix

4 large eggs (room temperature)

1/4 cup unsalted butter, melted

2 cups whole milk (room temperature)

1 tablespoon lemon zest

1 teaspoon pure vanilla extract

1/4 teaspoon salt

powdered sugar or whipped cream for serving (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.

2. In a blender, combine sugar, Bisquick, eggs, butter, milk, lemon juice, zest, vanilla, and salt. Blend until smooth.
