Ingredients

8 large hard-boiled eggs

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon white vinegar

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika (for garnish)

1 tablespoon chopped fresh chives (for garnish)


Instructions

1. Boil the eggs if not already prepared: place them in a saucepan, cover with water, bring to a boil, then simmer for 10–12 minutes. Transfer to an ice bath to cool completely.

2. Peel the eggs and separate the yolks from the whites. Finely chop the whites and place them in a bowl.

3. In another bowl, mash the yolks with a fork until smooth.

4. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Stir until fully combined and creamy.

5. Gently fold in the chopped egg whites. Mix until well combined, but leave some texture.

6. Transfer the dip to a serving bowl and use a spoon to create texture on top.

7. Garnish with smoked paprika and chopped chives.

8. Optional: Chill for 30 minutes to allow flavors to meld before serving.

Notes

For an ultra-smooth texture, mash yolks thoroughly before mixing in the mayo.

Garnish just before serving to keep chives and paprika fresh.

Add a spoonful of cream cheese for a richer version.
