Ingredients

2 large red onions, peeled and sliced into wedges or rings

1/2 cup apple cider vinegar

1/2 cup white vinegar

1/4 cup hot honey

1 teaspoon salt

1/2 teaspoon sugar

1 teaspoon crushed red pepper flakes

2 garlic cloves, sliced

1 teaspoon black peppercorns (optional)

1 tablespoon chopped fresh herbs (parsley or chives)

1/2 cup hot water

Instructions

1. Peel the red onions and slice them into wedges or rings, depending on your texture preference.

2. In a small saucepan or bowl, combine apple cider vinegar, white vinegar, hot honey, salt, sugar, garlic, crushed red pepper, and peppercorns. Stir in warm water to dissolve everything.

3. Place onion slices in a clean glass jar, layering with chopped herbs.

4. Pour the warm brine over the onions until fully submerged.

5. Seal the jar tightly and let sit at room temperature for 30–60 minutes.

6. For best flavor, refrigerate for 2–4 hours before serving.

7. Store leftovers in the fridge for up to 2 weeks.

Notes

Let the onions sit longer for deeper flavor — overnight is ideal.

For vegan version, use agave syrup and add chili flakes or fresh chili for heat.

Always use clean utensils to avoid contamination and extend shelf life.
