Ingredients

2 lbs carrots, peeled and cut diagonally into 1 to 1.5-inch pieces

2 tablespoons olive oil

3 tablespoons honey

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika or cinnamon

Fresh chopped parsley, for garnish


Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash, peel, and cut carrots into evenly sized diagonal chunks.

3. In a mixing bowl, whisk together olive oil, honey, salt, pepper, garlic powder, and smoked paprika (if using).

4. Add carrots and toss well to coat each piece.

5. Arrange the carrots in a single layer on a parchment-lined baking sheet.

6. Roast for 25–35 minutes, flipping halfway through, until tender and golden.

7. Check doneness with a fork—edges should be caramelized.

8. Garnish with fresh parsley and serve warm.
