1 lb smoked sausage or kielbasa, sliced

2 large sweet potatoes, peeled and diced

3 tablespoons olive oil, divided

Salt and black pepper, to taste

1/2 teaspoon smoked paprika

1/4 teaspoon chili flakes (optional)

1/3 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon apple cider vinegar or lemon juice

1/4 cup water or chicken broth

Fresh chopped parsley, for garnish


Instructions

1. Peel and cube the sweet potatoes into 1-inch pieces. Slice the sausage into 1/2-inch rounds. Mince garlic and whisk together the honey garlic sauce: honey, soy sauce, vinegar, garlic, and water or broth.

2. Heat 2 tablespoons olive oil in a skillet over medium. Add sweet potatoes, season with salt, pepper, and paprika. Cover and cook 10–12 minutes until tender and golden. Remove from pan.

3. Add remaining 1 tablespoon olive oil to the skillet. Sauté sausage rounds until browned, about 3–4 minutes per side.

4. Deglaze pan with water or broth, scraping up browned bits. Return sweet potatoes to the pan.

5. Pour honey garlic sauce over everything. Toss gently and let simmer for 5 minutes, allowing sauce to reduce and glaze the sausage and potatoes.

6. Garnish with parsley and serve hot. Enjoy as-is or pair with rice, greens, or salad.
