A fast, flavorful, and satisfying meal that combines tender chicken pieces coated in a sweet-savory honey garlic sauce, served over a bed of fluffy white rice and topped with sesame seeds and green onions. Perfect for weeknight dinners or meal prep.
Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 cups cooked white rice (jasmine or long grain preferred)
- 1/3 cup honey
- 1/4 cup soy sauce (use tamari for gluten-free option)
- 3 garlic cloves, minced
- 1 tablespoon rice vinegar (or apple cider vinegar)
- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)
- 1 tablespoon cooking oil (vegetable or sesame oil)
- 1 tablespoon sesame seeds
- 2 green onions, sliced
- Salt and pepper, to taste
Instructions
- Cook the rice according to package instructions and set aside.
- Season the diced chicken lightly with salt and pepper.
- Heat oil in a skillet over medium-high heat. Add chicken in a single layer and cook for 5–7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
- Add honey, soy sauce, and vinegar. Stir and let it simmer gently.
- In a small bowl, mix cornstarch with water to create a slurry. Add to the simmering sauce and stir until thickened.
- Return chicken to the skillet and toss to coat in the sauce. Let simmer for 1–2 minutes.
- Assemble bowls with rice, glazed chicken, and garnish with sesame seeds and green onions.
