Description

A fast, flavorful, and satisfying meal that combines tender chicken pieces coated in a sweet-savory honey garlic sauce, served over a bed of fluffy white rice and topped with sesame seeds and green onions. Perfect for weeknight dinners or meal prep.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups cooked white rice (jasmine or long grain preferred)
  • 1/3 cup honey
  • 1/4 cup soy sauce (use tamari for gluten-free option)
  • 3 garlic cloves, minced
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 tablespoon cooking oil (vegetable or sesame oil)
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Season the diced chicken lightly with salt and pepper.
  3. Heat oil in a skillet over medium-high heat. Add chicken in a single layer and cook for 5–7 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
  5. Add honey, soy sauce, and vinegar. Stir and let it simmer gently.
  6. In a small bowl, mix cornstarch with water to create a slurry. Add to the simmering sauce and stir until thickened.
  7. Return chicken to the skillet and toss to coat in the sauce. Let simmer for 1–2 minutes.
  8. Assemble bowls with rice, glazed chicken, and garnish with sesame seeds and green onions.
