Ingredients
For the Chicken and Sauce:
- 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons honey
- 2 tablespoons chipotle peppers in adobo sauce, finely minced
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
For the Rice:
- 1 cup jasmine or basmati rice
- 2 cups water or chicken broth
- Pinch of salt
For the Toppings:
- 1 ripe avocado, sliced
- 1 cup canned black beans, drained and rinsed
- 1 cup sweet corn kernels
- Fresh cilantro, chopped
- Fresh lime wedges (optional)

Cook the Rice: Rinse rice under cold water. In a saucepan, combine rice, water or broth, and salt. Bring to a boil, then cover and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
