Ingredients
For the Chicken & Marinade:
- 1 1/2 lbs boneless, skinless chicken thighs
- 2 chipotle peppers in adobo sauce
- 2 tbsp adobo sauce
- 3 tbsp honey
- 1 tbsp olive oil
- 2 tbsp lime juice
- 3 garlic cloves, minced
- 1 tsp cumin
- Salt and pepper to taste
For the Bowl Base:
- 2 cups cooked white rice
Toppings:
- 1 avocado, sliced
- 1 cup shredded carrots
- 1 cup corn
- 1/2 cup chopped cilantro
- 1/2 cup chopped cucumbers or greens
- Optional: lime wedges, jalapeño slices
Instructions
- Blend chipotle peppers, adobo sauce, honey, olive oil, lime juice, garlic, cumin, salt, and pepper until smooth.
- Marinate chicken with half the sauce for at least 30 minutes (or overnight).
- Cook chicken on a hot grill pan or skillet, 5-6 minutes per side until cooked through.
- Let chicken rest, then slice.
- Cook white rice and prepare toppings.
- Assemble bowls: rice base, sliced chicken, vegetables, herbs, and drizzle reserved sauce.
