Honey Chipotle Chicken Bowls

Description

A vibrant and flavorful dish with tender chicken glazed in a smoky-sweet honey chipotle sauce, served over fluffy rice and topped with fresh vegetables and herbs. Perfect for meal prep or a colorful weeknight dinner.


Ingredients

For the Chicken & Marinade:

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 2 chipotle peppers in adobo sauce
  • 2 tbsp adobo sauce
  • 3 tbsp honey
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • Salt and pepper to taste

For the Bowl Base:

  • 2 cups cooked white rice

Toppings:

  • 1 avocado, sliced
  • 1 cup shredded carrots
  • 1 cup corn
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped cucumbers or greens
  • Optional: lime wedges, jalapeño slices

Instructions

  1. Blend chipotle peppers, adobo sauce, honey, olive oil, lime juice, garlic, cumin, salt, and pepper until smooth.
  2. Marinate chicken with half the sauce for at least 30 minutes (or overnight).
  3. Cook chicken on a hot grill pan or skillet, 5-6 minutes per side until cooked through.
  4. Let chicken rest, then slice.
  5. Cook white rice and prepare toppings.
  6. Assemble bowls: rice base, sliced chicken, vegetables, herbs, and drizzle reserved sauce.
