Ingredients

2 large boneless, skinless chicken breasts (halved into 4 cutlets)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup cherry tomatoes

4 slices fresh mozzarella cheese

1/4 cup balsamic vinegar

1 tablespoon honey

2 tablespoons fresh basil, chopped

Instructions

1. Pat the chicken cutlets dry and season with garlic powder, Italian seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes per side until golden and nearly cooked through. Remove and set aside.

3. Add balsamic vinegar and honey to the same pan and simmer for 3-4 minutes until slightly thickened.

4. Add cherry tomatoes and let them blister for 2 minutes in the glaze. Return chicken to the pan.

5. Top each piece of chicken with mozzarella. Cover the skillet and melt the cheese for 2-3 minutes or broil until bubbling.

6. Garnish with fresh chopped basil and serve hot with glaze and tomatoes spooned on top.

Notes

Use fresh mozzarella for the best melting texture and flavor.

Let the chicken rest for a few minutes before serving to keep it juicy.

Aged balsamic vinegar adds more depth—don’t substitute with cheap varieties.
