Ingredients
1 cup full-fat cottage cheese
3/4 cup almond flour
1/2 cup unsweetened cocoa powder
2/3 cup erythritol or monk fruit sweetener
2 large eggs
1/4 cup melted butter
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup sugar-free chocolate chips (optional, divided)
Instructions
1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
2. Blend the cottage cheese in a food processor or with an immersion blender until smooth and creamy.
3. In a large mixing bowl, combine the blended cottage cheese, eggs, melted butter, and vanilla extract. Whisk until smooth.
4. In a separate bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
5. Gradually fold the dry mixture into the wet ingredients. Stir gently until fully incorporated.
6. Fold in most of the chocolate chips, reserving a few to sprinkle on top.
