Ingredients
2 lbs chicken thighs, bone-in, skin-on
3 tbsp olive oil
3 tbsp fresh lemon juice
4 cloves garlic, minced
1½ tsp dried oregano
1 tsp paprika
1 tsp salt
½ tsp black pepper
2 tbsp fresh parsley, chopped
Lemon wedges, for serving
Instructions
1. In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
2. Add chicken thighs and toss to coat. Marinate for at least 30 minutes, ideally 2 hours or overnight.
3. Preheat the oven to 425°F (220°C). Place an oven-safe skillet in the oven while it preheats.
4. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down for 4–5 minutes until golden. Flip and sear 3 more minutes.
5. Transfer the chicken to the oven and roast for 20–25 minutes until the internal temperature reaches 165°F (74°C).
6. Let rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.

Marinate the chicken for at least 2 hours for the best flavor.
