Ingredients

2 1/4 teaspoons active dry yeast

1 cup warm water (about 110°F)

2 teaspoons granulated sugar

2 1/2 to 3 cups all-purpose flour

1 teaspoon salt

2 tablespoons olive oil

4 tablespoons unsalted butter, melted

3 cloves garlic, finely minced

2 tablespoons chopped fresh parsley

2 tablespoons grated parmesan cheese (optional)

Pinch of salt

Warm marinara sauce for dipping (optional)


Instructions

1. In a large bowl or stand mixer, mix warm water, sugar, and yeast. Let sit 5–10 minutes until frothy.

2. Add olive oil, salt, and 2 1/2 cups flour. Mix until dough forms, adding more flour as needed.

3. Knead for 8–10 minutes until smooth and elastic.

4. Transfer to an oiled bowl, cover, and let rise for 1 hour until doubled in size.

5. Punch down dough and divide into 12 pieces. Roll each into an 8-inch rope and tie into a knot.

6. Place knots on lined baking sheet. Cover and let rise for 20–30 minutes.

7. Preheat oven to 400°F. Bake knots 12–15 minutes until golden.

8. Melt butter and stir in garlic, parsley, salt, and parmesan.

9. Brush warm knots with garlic butter immediately after baking.

10. Serve with warm marinara, if desired.

Notes

Let the dough fully rise during both proofing stages for maximum fluffiness.

Brush the garlic butter while knots are warm so they absorb all the flavor.
