Ingredients

4 large egg whites

1 cup granulated sugar

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

green food coloring a few drops

1 cup heavy cream

2 tablespoons powdered sugar

1 cup fresh cranberries

1/2 cup raspberries

1/2 cup blueberries

fresh rosemary sprigs small pieces

1 teaspoon lemon zest optional


Instructions

1. Preheat oven to 225°F (110°C) and line a baking sheet with parchment paper.

2. Beat egg whites until foamy, then add cream of tartar and continue mixing until soft peaks form.

3. Gradually add sugar while mixing until stiff glossy peaks form.

4. Mix in vanilla extract and gently fold in green food coloring.

5. Transfer mixture to a piping bag and pipe wreath shapes onto the baking sheet.

6. Bake for 1 hour, then turn off oven and let meringues cool inside for another hour.

7. Whip heavy cream with powdered sugar until soft peaks form.

8. Fill cooled meringues with whipped cream.

9. Top with berries and garnish with rosemary and a dusting of powdered sugar.

Notes

Make sure egg whites are at room temperature for best volume.

Avoid humidity as it can make meringues sticky.

Do not open the oven during baking to prevent cracking.
