Ingredients

2 cups elbow macaroni (uncooked)

1 1/2 cups cottage cheese (blended smooth)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1 cup milk (whole or 2%)

1/2 cup plain Greek yogurt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon dry mustard (optional)

Salt and black pepper to taste

1 tablespoon butter (optional)

Chopped parsley for garnish (optional)


Instructions

1. Cook the elbow macaroni until just al dente. Drain and set aside.

2. In a blender, process the cottage cheese until it’s completely smooth.

3. In a mixing bowl, combine the blended cottage cheese, milk, Greek yogurt, garlic powder, onion powder, dry mustard, salt, and pepper. Stir in the shredded cheeses.

4. Place the cooked pasta in the crockpot and pour the cheese mixture over it. Add butter if using. Stir to combine evenly.

5. Cover and cook on LOW for 1.5 to 2 hours, stirring once halfway through.

6. Once the cheese is melted and the dish is creamy, stir, taste, and adjust seasoning.
