Ingredients
12 oz rotini pasta
1 lb boneless skinless chicken breasts, diced
1 packet Hidden Valley Ranch seasoning mix
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the rotini pasta until al dente according to package directions. Drain and set aside.
2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 6–8 minutes until golden and cooked through.
3. Stir in the minced garlic and cook for 1 minute, until fragrant.
4. Sprinkle the ranch seasoning mix over the chicken and stir to coat.
5. Pour in the heavy cream and simmer for 3–4 minutes, allowing the sauce to begin thickening.
6. Stir in the Parmesan cheese and mix until melted and smooth.
7. Add the cooked pasta to the skillet and toss to coat everything in the creamy sauce.
8. Remove from heat, garnish with chopped parsley if desired, and serve warm.
Notes
Use freshly grated Parmesan for the smoothest sauce.
A splash of reserved pasta water can help loosen the sauce if it becomes too thick.
Add spinach or broccoli toward the end for extra nutrients and texture.
