Ingredients

2 lbs beef chuck roast or stew meat, cut into 1-inch cubes

1 tablespoon olive oil

1 medium yellow onion, finely chopped

3 garlic cloves, minced

8 oz cremini or white mushrooms, sliced

1 1/2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon paprika

Salt and freshly ground black pepper, to taste

1 tablespoon cornstarch (optional, for thickening)

3/4 cup sour cream

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions

1. Heat olive oil in a large skillet over medium-high heat. Sear beef cubes in batches until browned, then transfer to the slow cooker.

2. In the same skillet, sauté onions until translucent, then add garlic and mushrooms. Cook until softened. Deglaze with a splash of beef broth, scraping up browned bits.

3. Transfer onion-mushroom mixture into the slow cooker with beef. Add remaining broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Stir to combine.

4. Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is fork-tender.

5. If desired, mix cornstarch with cold water to make a slurry. Stir it in during the last 30 minutes to thicken the sauce.

6. Turn off the heat and stir in the sour cream gently.

7. Cook egg noodles separately according to package directions. Drain and toss with a bit of oil or butter.

8. Serve beef stroganoff over noodles, garnish with chopped parsley, and enjoy!

Notes

Searing the beef before slow cooking builds deeper, richer flavor.

Always add sour cream off heat to prevent curdling.

Cook the noodles separately and just before serving to avoid them turning soggy.
