Ingredients
1 lb boneless skinless chicken thighs or breasts
3 tbsp olive oil
1 lemon, juiced
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp ground coriander
1/2 tsp black pepper
1/2 tsp salt
1 cup plain Greek yogurt
1/2 cucumber, grated and excess moisture squeezed out
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp fresh dill, chopped
Salt and pepper to taste
1 cup cherry tomatoes, diced
1 cucumber, diced
1/4 red onion, finely sliced (optional)
1/4 cup fresh parsley or mint, chopped
Crumbled feta cheese (optional)
4–6 soft flatbreads or pita breads
Olive oil spray
Instructions
1. Place chicken in a bowl or bag and add olive oil, lemon juice, garlic, and all spices. Mix to coat and marinate for 20 minutes to 2 hours.
2. In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper to make tzatziki. Chill until ready to use.
3. Heat grill pan and lightly oil. Grill chicken for 4–5 minutes per side until cooked through and charred. Let rest, then slice.
4. Chop tomatoes, cucumber, onion (if using), and herbs. Arrange in bowls.
5. Warm flatbreads in a skillet or over flame until pliable. Keep warm in a towel.
6. Assemble tacos: Add chicken, top with veggies, spoon tzatziki, and sprinkle herbs or feta.
7. Serve immediately and enjoy fresh!

Squeeze excess water from cucumbers to keep the tzatziki thick and creamy.
