Ingredients
1 pound ribeye or sirloin steak
1 teaspoon kosher salt
0.5 teaspoon freshly ground black pepper
1 tablespoon olive oil
2 medium zucchinis sliced lengthwise
1 tablespoon olive oil (for zucchini)
0.5 teaspoon garlic powder
0.5 teaspoon smoked paprika
1 pinch salt
0.5 cup sour cream or Greek yogurt
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 clove garlic finely grated
2 tablespoons fresh parsley finely chopped
1 tablespoon fresh chives or green onions chopped
0.5 lemon juiced
Salt and pepper to taste
2 cups cooked seasoned rice
Instructions
1. Pat the steak dry with paper towels and season both sides with salt and pepper. Let it sit at room temperature for 20–30 minutes.
2. Slice zucchinis and toss with olive oil, garlic powder, smoked paprika, and a pinch of salt. Let sit 10 minutes.
