Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • 4 slices pepper jack cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges
  • Optional: cherry tomatoes or mixed greens for serving

Instructions

  1. Pat chicken dry and pound to even thickness if needed.
  2. Drizzle with olive oil and season with garlic powder, cumin, salt, and pepper.
  3. Marinate in ¾ cup salsa verde for 30 minutes in the fridge.
  4. Preheat grill to medium-high and oil the grates.
  5. Grill chicken for 5–6 minutes per side until internal temp hits 165°F.
  6. In last 2 minutes of grilling, top each chicken breast with a slice of pepper jack cheese and close lid to melt.
  7. Remove from grill and spoon over remaining salsa verde.
  8. Garnish with chopped cilantro and lime wedges. Serve immediately.
