Ingredients

  • 2 ripe peaches, halved and pitted
  • 2 tbsp honey (or maple syrup for a vegan option)
  • 3 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • ¼ cup olive oil
  • 1 small garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional, for heat)

Instructions

  1. Preheat a grill or grill pan to medium-high heat. Lightly brush peach halves with olive oil.
  2. Grill peaches for about 3-4 minutes on the cut side until caramelized, then flip and cook for another minute. Remove and let cool.
  3. In a blender or food processor, add the grilled peaches, honey, Dijon mustard, apple cider vinegar, garlic, salt, and pepper. Blend until smooth.
  4. Slowly drizzle in the olive oil while blending on low speed until the dressing reaches a creamy consistency.
  5. Taste and adjust seasoning, adding more honey for sweetness or vinegar for tang.
  6. Pour into a jar or airtight container and refrigerate for up to 1 week. Shake before each use.
