Ingredients
- 2 ripe peaches, halved and pitted
- 2 tbsp honey (or maple syrup for a vegan option)
- 3 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- ¼ cup olive oil
- 1 small garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional, for heat)
Instructions
- Preheat a grill or grill pan to medium-high heat. Lightly brush peach halves with olive oil.
- Grill peaches for about 3-4 minutes on the cut side until caramelized, then flip and cook for another minute. Remove and let cool.
- In a blender or food processor, add the grilled peaches, honey, Dijon mustard, apple cider vinegar, garlic, salt, and pepper. Blend until smooth.
- Slowly drizzle in the olive oil while blending on low speed until the dressing reaches a creamy consistency.
- Taste and adjust seasoning, adding more honey for sweetness or vinegar for tang.
- Pour into a jar or airtight container and refrigerate for up to 1 week. Shake before each use.
