Description

A creamy, tangy, and briny Mediterranean-inspired dip made with green olives, feta cheese, and a touch of olive oil. This quick and easy appetizer pairs perfectly with pita, crackers, or fresh veggies. A must-try for olive lovers!


Ingredients

  • 1 cup green olives, pitted
  • 4 oz feta cheese, crumbled
  • 2 tbsp olive oil (plus extra for garnish)
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley or basil, chopped
  • Black pepper, to taste

Instructions

  1. Drain the green olives and crumble the feta cheese into small pieces.
  2. In a food processor, combine the olives, feta, garlic, lemon juice, and olive oil.
  3. Blend until smooth but slightly chunky, depending on your preference.
  4. Taste and adjust seasoning with black pepper and red pepper flakes. Add more olive oil if needed.
  5. Transfer to a bowl and drizzle with extra olive oil. Garnish with fresh herbs and additional crumbled feta.
  6. Serve immediately with pita, crackers, or fresh vegetables. Enjoy!
