Ingredients
- 1 cup green olives, pitted
- 4 oz feta cheese, crumbled
- 2 tbsp olive oil (plus extra for garnish)
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp fresh parsley or basil, chopped
- Black pepper, to taste
Instructions
- Drain the green olives and crumble the feta cheese into small pieces.
- In a food processor, combine the olives, feta, garlic, lemon juice, and olive oil.
- Blend until smooth but slightly chunky, depending on your preference.
- Taste and adjust seasoning with black pepper and red pepper flakes. Add more olive oil if needed.
- Transfer to a bowl and drizzle with extra olive oil. Garnish with fresh herbs and additional crumbled feta.
- Serve immediately with pita, crackers, or fresh vegetables. Enjoy!
