Ingredients
- 2–3 medium ripe tomatoes, sliced into 1/4-inch rounds
- 1 large cucumber, sliced into thick rounds
- 200g (7 oz) feta cheese, cubed or thickly sliced
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh mint leaves (optional)
Optional Add-ins:
- Kalamata olives, pitted and halved
- Thinly sliced red onion
- Lemon juice (for added zest in dressing)
Instructions
- Prep Ingredients: Slice tomatoes and cucumber evenly. Pat dry with paper towels. Cube the feta and set aside.
- Make Dressing: In a small bowl, mix olive oil, oregano, salt, pepper, and optional lemon juice.
- Build Base Layer: On a serving plate, lay cucumber slices in a circle.
- Add Layers: Stack with tomato slices, then a layer of feta. Repeat for 3–4 layers.
- Drizzle Dressing: Spoon the herbed oil over the tower. Let it run down naturally.
- Garnish & Serve: Add mint leaves and serve immediately with a steak knife or spoon.
