Description

A stunning stack of Mediterranean flavor, the Greek Feta Salad Tower layers juicy tomatoes, crisp cucumbers, and creamy feta into a vibrant centerpiece. Drizzled with herb-infused olive oil and garnished with fresh mint, it’s a refreshing, no-cook dish that’s as impressive as it is easy to assemble.


Ingredients

  • 23 medium ripe tomatoes, sliced into 1/4-inch rounds
  • 1 large cucumber, sliced into thick rounds
  • 200g (7 oz) feta cheese, cubed or thickly sliced
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh mint leaves (optional)

Optional Add-ins:

  • Kalamata olives, pitted and halved
  • Thinly sliced red onion
  • Lemon juice (for added zest in dressing)

Instructions

  1. Prep Ingredients: Slice tomatoes and cucumber evenly. Pat dry with paper towels. Cube the feta and set aside.
  2. Make Dressing: In a small bowl, mix olive oil, oregano, salt, pepper, and optional lemon juice.
  3. Build Base Layer: On a serving plate, lay cucumber slices in a circle.
  4. Add Layers: Stack with tomato slices, then a layer of feta. Repeat for 3–4 layers.
  5. Drizzle Dressing: Spoon the herbed oil over the tower. Let it run down naturally.
  6. Garnish & Serve: Add mint leaves and serve immediately with a steak knife or spoon.
