Ingredients
2 cups cherry tomatoes halved
1 large cucumber diced
1/2 red onion finely chopped
1 cup bell peppers chopped
1 cup cottage cheese
1/2 cup Kalamata olives pitted
2 tablespoons fresh parsley chopped
1 teaspoon dried oregano
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Wash and prepare all vegetables by chopping them into bite-sized pieces
2. Soak chopped red onion in cold water for 5–10 minutes then drain
3. Whisk together olive oil vinegar garlic oregano salt and pepper
4. Combine tomatoes cucumber onion bell peppers and olives in a bowl
