Ingredients

2 cups cherry tomatoes halved

1 large cucumber diced

1/2 red onion finely chopped

1 cup bell peppers chopped

1 cup cottage cheese

1/2 cup Kalamata olives pitted

2 tablespoons fresh parsley chopped

1 teaspoon dried oregano

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and prepare all vegetables by chopping them into bite-sized pieces

2. Soak chopped red onion in cold water for 5–10 minutes then drain

3. Whisk together olive oil vinegar garlic oregano salt and pepper

4. Combine tomatoes cucumber onion bell peppers and olives in a bowl

5. Add cottage cheese and gently fold

6. Sprinkle parsley on top

7. Pour dressing and toss gently

8. Taste and adjust seasoning

9. Chill for 10–15 minutes

10. Toss again and serve

Notes

Use small curd cottage cheese for better texture and distribution

Dry vegetables well to avoid excess moisture
